To make this, you will need 3 to 4 boiled potatoes, 1 tablespoon oil, 1 teaspoon coriander seeds, 1 teaspoon cumin seeds, 1/2 teaspoon fennel seeds, 1/2 teaspoon asafoetida, 1/2 teaspoon black pepper, 1 teaspoon ginger and green chili paste, 1 teaspoon red chili powder, 1 teaspoon turmeric powder, salt to taste, 2 large tomatoes, 1 teaspoon dry mango powder, 1/2 teaspoon garam masala, 1 teaspoon kasuri methi, 2 cups water, and fresh coriander leaves.

Recipe for Homemade Bhandara Aloo

First, lightly grind the coriander, cumin, and fennel seeds together. You can grind them in a mixer if you prefer. Now, heat oil in a pan over low heat. Add cumin seeds, asafoetida, and black pepper. Add the ground spices, ginger, and green chilli paste after 1 to 2 minutes. Fry for a minute. Grind the tomatoes into a paste. Then, add turmeric powder, red chilli powder, salt, and tomato paste. Cook until the oil separates. Add the mashed potatoes, water, dry mango powder, garam masala, and dried fenugreek leaves. Cook over low heat for 10 minutes. Sprinkle chopped fresh coriander leaves over the top. Your bhandara aloo is ready. Enjoy it with hot puris.
