You may have tasted Frankie as street food, but today we’re showing you how to make it easily at home. It’s a great and tasty option for a light meal or to serve to guests.
What’s Needed
- For Frankie Spices
- Red chilli powder
- Coriander powder
- Garam masala
- Roasted cumin powder
- Turmeric powder
- Black pepper powder
- Black salt
- Dry mango powder
Mix all these spices thoroughly and store them in a container.
Flour for Frankie
- Maida
- Wheat flour
- Salt
Mix all the ingredients and knead them into a dough. Let it rest, covered, for 10 to 15 minutes.
How to Make the Frankie Base
- Knead the dough thoroughly again and roll it into equal balls to form thin rotis.
- You can bake rotis according to the number of members in your household.
Make the Frankie stuffing like this:
- Heat a pan over medium heat, add a little oil, ginger-garlic, and green chilli paste, and fry until fragrant.
- Add the prepared Frankie masala to the pan and fry for a while on low heat, being careful not to burn the masala.
- Now add three to four mashed potatoes to the masala and stir well.
- Turn off the heat and sprinkle chopped coriander leaves on top.
- When the mixture cools, form four long rolls from the mixture.
Make the Frankie rolls like this:
- Add a little oil to a pan and fry the prepared potato rolls until they are golden brown on both sides.
- Now, put a little oil or ghee in the same pan and fry on both sides.
- Place the roti on a large plate, apply green chutney, sprinkle the Frankie masala, and place the potato roll on top.
- Spread the chopped onions and carrots on top of the rolls and roll them tightly.
- If you prefer, line the bottom of this roll with parchment paper to prevent the filling from spilling out.
- Serve it hot with sauce or chutney.
